- A cold piece of rare roast beef rump
- 1 red onion
- 2 long red chillis
- 250g rocket
- 1 tsp lemon zest
- 100ml wasabi dressing
- Slice the beef rump (against the grain) as thin as you can.
- Slice the red onion thinly.
- Julienne the red chilis.
- Toss the sliced beef, onion, chilli and rocket with the wasabi dressing, coating thoroughly.
- Layer on a plate and sprinkle with the lemon zest as a garnish.
